Mix flour , salt and oil add the water as needed to make firm and smooth dough . Knead the dough on a lightly oil surface for about 1 minutes . Cover and set aside .
Heat oil in a pan add carom seeds and chilli .
Now add the onion and chopped ginger and garlic and stir fry for 2 minutes .
Now add the peanuts fry well then add the potatoes and fry .
Add the amachur powder , garam masala powder and mix well . Switch off the flame and cool to the room temperature .
Making paratha samosa
Now divide the dough into small ball .
Take one ball and roll giving it a round shape with your hands . Place it on the rolling pins and roll out lengthwise , thinly .
Divided the rolled sheet into two equal halves with a knife . Take One part and keep it in your palm and stuff the filling and give a fold with a fork . Likewise prepare all the samosa .
Heat in a pan and place the samosa . When the paratha samosa start to change color from sides , flip it over .
Lightly press the Paratha all around and add 1 tablespoons ghee and fry both sides golden brown .
Sprinkle the grated cheese and serve hot with tomato sauce .
